Grilled Zucchini with Sun-Dried Tomatoes
and Prosciutto

 

What You Need

 

3 zucchini                                                                                                                  1 tablespoon olive oil, plus an additional tablespoon for drizzling                 1 teaspoon salt                                                                                                       Freshly cracked black pepper                                                                                 ½ cup sun-dried tomatoesProsciutto slices, one for each slice of zucchini   15 fresh basil leaves


How to Make It 
1.    Trim zucchini ends and cut lengthwise into 1/4 inch slices.
2.    Brush both sides of the zucchini slices with olive oil
3.    Season with salt and freshly cracked black pepper.
4.    Heat grill pan over medium heat and grill for approximately 4    minutes on each side.
5.    Remove from heat and allow to cool on wire rack.
6.    Layer pieces of sun-dried tomatoes, prosciutto, and basil leaves on the zucchini slices
7.    Roll each piece of zucchini and place seam side down on a platter.    
       Drizzle with olive oil and serve.

Spice Rubbed Shrimp

 

What You Need

 

2 pounds large shrimp (21/25 count), peeled and deveined

½ tablespoon paprika

1 tablespoon garlic powder

1 teaspoon cayenne pepper

1 tablespoon dried thyme

1 tablespoon all-purpose seasoning salt

1 teaspoon cumin

1 teaspoon grated ginger

How to Make It

  1. Combine all of the ingredients for the spice rub in large bowl

  2. Add the shrimp; toss until the shrimp are coated with the rub, cover, and chill for approximately 1 hour in the refrigerator.

  3. Preheat a grill or grill pan, medium-high heat, and grill the shrimp for 3 minutes on each side.

  4. Remove from heat and serve.

 

Note: You may skewer the shrimp on bamboo skewers before grilling.

Cheddar Mashed Sweet Potatoes

 

What You Need

 

3 pounds sweet potatoes, peeled and cubed

1 tablespoon salt

2 tablespoons butter                                                                                              ½ cup shredded, sharp, white cheddar cheese

Freshly cracked black pepper

How to Make It

  1. Bring 3 quarts of water to boil in a pot over medium heat and add salt.

  2. Add cubed sweet potatoes and cook for 10-15 minutes or until the sweet potatoes become tender.

  3. Drain the sweet potatoes in a colander then transfer to a large bowl.

  4. Add shredded cheese and butter and mash to desired texture; season with freshly cracked black pepper and serve.
